Vegetarian Meals: How to make peanut noodles

This peanut noodle recipe has bold flavours and it is a very tasty dish that is easy to prepare.

Non vegetarians can also enjoy the meal when they feel like staying away from animal products.

Also, they may introduce beef or fish into the recipe if they wish. However this recipe is perfect for vegetarians.

What you need:

- 250 grams of whole grain noodles

- Quarter a cup of low sodium soy sauce

- One cup of vegetable broth

- Two tablespoons of rice vinegar

- Half a cup of peanut butter

- One teaspoon of chili sauce

- One tablespoon of honey

- Two teaspoons of vegetable oil

- One large red bell pepper, cut into thin strips

- Two carrots, washed and cut into thin strips

- 200 grams of peas

- One freshly peeled and grated ginger

- Three chopped garlic cloves

- Two onion, cut into slices

- Salt to taste

How to:

1. Boil the noodles according to cooking instructions on the packet. Drain when it is cooked.

2. Mix the broth, soy sauce, vinegar, peanut butter, honey, chili sauce, and salt in a bowl.

3. Heat up the oil in a large pan.

4. Add the in peppers, peas, and carrots and fry till the vegetables soften.

5. Stir in the ginger, onion, and garlic. Cook for about two minutes.

6.Add in the peanut butter and broth mixture and cook for about five minutes, stirring often.

7. Toss with the noodles till well incorporated.

8. Serve warm.
